TOO EASY CHICKEN NUGGETS  Serves 2.  2 chicken breasts, cut into bite-size pieces  1 cup(120g) breadcrumbs  1cup (125g) mayonnaise  1 tbsp. butter, melted  Preheat oven to 375F/180C. Coat chicken with mayonnaise and roll in breadcrumbs.Lay on a baking paper lined baking tray. Drizzle with a little butter and bake for 20 minutes.These are requested at least twice a week and gobbled up every single time ... TRY THEM!

Line a loaf tin with baking paper and pour mixture in. Bake for 40 minutes.  Optional: Serve warm with butter or cold with Cream Cheese Frosting (see: You Tube: Cooking with Kim) … Deliciously simple!

CHICKEN CARNIVAL CONES  Makes 8.  8 (9-inch) flour tortillas  2 cups leftover roast chicken, shredded  1 cup salsa  1/2 cup grated cheddar cheese  Fold tortilla in half (if small, fold only the bottom third up). Cinch the middle and roll around itself. Fill bottom of the cone with chicken, dollop 2 tsp. salsa, then cheese. Place on a paper lined baking tray and repeat the process until all ingredients are used. Bake in a 180C oven for 15 minutes or until golden and crisp.
