Cheesy Zucchini Rice (I know. Zucchini again! But our mini-garden produces like mad. Loved the combo of cheesy rice and Zucchini - quick and easy meal; like always I added a bit more cheese - different types I had as left-overs)
Fried Rice - 400 g Rice of your choice - 1000 g Water - 800 g Mixed Frozen Veggies (Corn, Peas and Carrots) - 100 g Mushrooms - 6 rashers Bacon - 1 large Onion - 1 Garlic clove - 2 Eggs (light beaten with fork) - 20 g Oil - Soy Sauce - Salt and Pepper - tinned or fresh Bamboo sprouts
Chicken, Pea, Parsley & Lemon risotto. Yum! Made a few small tweaks - no parmesan, no wine. Subbed chicken stock for TM vege stock paste. Just before serving stirred through a little dollop of coconut milk, another squeeze of lemonn, a good sprinkling of salt and pepper and topped with sheep's feta cheese. Tasty!
