Chicken, Pea, Parsley & Lemon risotto. Yum! Made a few small tweaks - no parmesan, no wine. Subbed chicken stock for TM vege stock paste. Just before serving stirred through a little dollop of coconut milk, another squeeze of lemonn, a good sprinkling of salt and pepper and topped with sheep's feta cheese. Tasty!
